White Chocolate and Cranberry Cookies

Ingredients
- ½ cup Butter, Softened
- ½ cup Packed Brown Sugar
- ½ cup White Sugar
- 1 Egg
- 1 tablespoon Brandy Or Vanilla
- 1½ cups All-Purpose Flour
- ½ teaspoon Baking Soda
- ¾ cups White Chocolate Chips
- 1 cup Dried Cranberries (See Note)
Method
Preheat oven to 375°F. Grease cookie sheets. In large bowl, cream butter, brown sugar and white sugar until smooth.
Beat in egg and brandy or vanilla.
Combine flour and baking soda; stir into sugar mixture. Mix in white chocolate chips and cranberries.
Drop by heaping spoonfuls onto prepared cookie sheets. Bake for 8-10 minutes. For best results, remove from oven while still soft. Allow cookies to cool for 1 minute on cookie sheet.
Notes
Trader Joe’s dried orange-flavored cranberries are really good in this.
