Maids of Honour

Method

Preheat oven to 350°F. Grease 16 patty tins. Roll out chilled pastry on lightly floured board. Use a 3 inch cookie cutter to cut rounds of this pastry. Line tins with pastry.

Beat together curd cheese and butter. Add beaten egg, brandy and sugar. Beat once again.

In separate bowl, beat together the potatoes, almonds, nutmeg, rind and juice. Gradually blend in cheese mixture. Beat thoroughly.

Spoon filling into pastry shells and bake 35-40 min or until set. Remove from oven and leave to cool for 15 min. before lifting onto a wire rack to finish cooling.
